Moroccan Tofu Tagine

Serves 4

1tsp paprika

1/2tsp cayenne pepper

1tsp ground cumin

1/2tsp turmeric

1/2tsp cinnamon

1 pinch saffron

Salt and pepper to taste

2 packets smoked tofu

1tbsp oil

1 onion, sliced

2 cloves garlic, chopped

1tsp ginger, grated

1/2 yellow pepper, chopped

1/2 red pepper, chopped

1/2 cup water

1 cup green olives

Preserved lemon

1tbsp harissa

1tbsp honey

1/4 cup parsley, chopped

Mix the paprika, cayenne pepper, cumin, turmeric, cinnamon, saffron, salt and pepper and rub it into the tofu. Heat the oil in a large pan. Add the onion and saute for three minutes. Add the garlic and ginger and saute until fragrant (about a minute). Add the water, tofu and peppers and cover and simmer for 15 minutes.

Add the preserved lemon, olives, harissa and honey and simmer, covered, for 15-20 minutes. Remove from heat and mix in the parsley. Top with sliced lemon.
