Honey Salmon
Serves 2
60ml orange juice
4 tbsp honey
3 tbsp balsamic vinegar
2 minced garlic cloves
2 tbsp olive oil
Squeeze of lemon
2 salmon fillets
1 cedar, cherry or beech plank
Combine orange juice, honey, vinegar, garlic and a squeeze of lemon in a pan. Stirring gently, bring to the boil and simmer for five minutes.
Stir in olive oil and take off the heat.
Brush glaze over salmon fillets and cook on a pre-soaked plank (cedar, cherry and beech work best with seafood) or wrap in pre-soaked wood paper and put in a pre-heated oven at 200C/390F for 5-7 minutes on each side.
Serve with a green salad and new potatoes, on a bed of asparagus or whatever tickles your tastebuds.
