Mother’s Day, on Sunday, March 15, is your chance to show her exactly how much you appreciate everything she has done for you in your life.

Why not start the day by giving her breakfast in bed?

Eggy Bread with Apple & Sultana Sauce

For the Eggy Bread:

  • 2 slices thick cut white bloomer bread
  • 2 eggs
  • 2 egg yolks
  • 1 tsp ground cinnamon
  • 1 tsp brown sugar
  • A pinch of salt
  • A knob of butter

For the Apple & Sultana Sauce:

  • 2 cooking apples, peeled and chopped
  • A handful sultanas
  • 100g sugar
  • ½ tsp mixed spice

To decorate:

  • A handful mixed seasonal berries

To make the apple and sultana sauce, mix the fruit with the sugar in a saucepan and heat slowly until it starts to break down a little.

For the eggy bread, beat the eggs, salt, sugar and cinnamon together until smooth and put into a wide, shallow bowl.

Dip the bread into the egg mix, turning it so that both sides are well covered, and soak for a few minutes to absorb as much egg as possible.

Add the butter to a pre-heated frying pan at a moderate temperature. When the butter begins to foam, gently add the slices of bread.

Cook until golden brown on one side then flip over and repeat. Drizzle with the apple and sultana sauce and garnish with fresh berries. Serve with your choice of additional extras – coffee, tea, fruit juice, flowers, newspaper, Mothers’ Day card...

Then leave your Mum to indulge and relax while you do the washing up!
