This traditional meal is made from ripe plantains and black-eyed beans. This dish is common among most west African countries and has become popular over the years. There are many health benefits to black-eyed beans and the addition of ripe plantains gives the meal a sweet taste.

Beans and Plantain Porridge

  • 500g beans (brown or black-eyed beans)
  • 150g ripe plantains (peeled and cut into chunks)
  • 1 onion, sliced
  • 1 scotch bonnet pepper, if liked
  • 2 tbsp ground crayfish
  • 1 stock cube
  • 1 ladleful red palm oil
  • Salt and pepper to taste
  • Water (as needed)

First soak the beans in cold water for about five minutes. Then discard the water and rinse the beans. Grind the crayfish, chop the onion and pepper, if using and set aside.

Add the beans into a pot of pressure cooker, add enough water to cover the beans. Then leave to cook until tender but not too soft. You might need to add more water but be careful not to add too much. Now add the onions, ground crayfish, stock cube, palm oil and finally add salt and chilli to taste, if needed.

Peel your ripe plantain, sprinkle with salt and shallow fry in a frying pan or fry in a deep fryer until it turns a golden colour.

Spoon your beans onto a serving plate and accompany with the fried plantain.
