Kenwyne Jones halved the deficit in first-half stoppage time but Marc Pugh restored the two-goal cushion with a 20-yard lofted effort before the whistle.
Cardiff defender Sean Morrison upset the apple cart with a thumping header on 48 minutes but with the game in the balance, substitute Yann Kemorgangt fired home a sublime free kick.
Morrison scored with another header with 12 minutes to go but Cherries striker Callum Wilson had the final say, rounding City stopper David Marshall before slotting home at the death.
