Southampton chef Jay Geddes has cooked for celebrities like Beyoncé, Rihanna and the Kings of Leon – not to mention our Royal Family. Here, he shares some of his favourite summer recipes
Italian Salad (serves 4/6)
- 1kg new potatoes (halved)
- 2 tbsp of olive oil
- 4 tbsp of grated Parmesan cheese
- Small handful of fresh basil
- Small handful of sun-dried tomatoes
Boil potatoes in lightly salted water for 10 minutes. Leave to cool then cut in half. Roughly chop the basil and the sun dried tomatoes, mix all together with the olive oil and finish with Parmesan
Simple Italian Herbed Chicken (serves 4/6)
- Half cup red wine vinegar
- 1 tbsp oregano
- 1 tbsp thyme
- 1 tbsp garlic
- 1 tbsp salt
- 1 tbsp ground red pepper
- 1 pack of chicken breasts
Mix everything together except the chicken. Brush marinade over chicken and place in a glass dish. Add remaining marinade and refrigerate for around 30 minutes or longer. Take out fridge and grill for six or seven minutess each side (sizes may vary) brushing with remaining marinade halfway through.
Sicilian Lemon Posset (serves 8)
- 900ml of double cream
- 225g unrefined castor sugar
- 3 organic Sicilian lemons (zest and juice)
- Handful of fresh raspberries
- Icing sugar
Bring cream and sugar to the boil in a thick bottomed pan. Add juice and zest of lemons. Pass through fine sieve into a jug. Poor into glasses and put in fridge to set for about three hours. Then add raspberries and finish dusting with icing sugar.
