BAKERS across the county are being urged to sign up to this year’s Great Dorset Bake Sale on May 5, in aid of Dorset disability charity, Diverse Abilities Plus Here is one recipe from the charity's recipe book, Scrumptious Home Baking, to help you bake a difference for a good cause.
Toffee Apple Loaf by Sam Randle Corfe Cakes & Bakes
Preheat oven 180c
Line a loaf tin
- 1 cup light brown sugar
- 1/3 cup of vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups self raising flour (or gluten free self raising flour)
- 1 cooking apple peeled and sliced
- 3/4 cup toffee yoghurt (or plain yoghurt will work)
- 1/4 cup milk
Drizzle
- 1 teaspoon ground cinnamon
- 1 tablespoon pure maple syrup
Mix the wet ingredients together and then add the dry ingredients and mix well.
Line the bottom of the loaf tin with the apple slices and then drizzle half of the cinnamon/maple on the apples.
Place the batter in the tin on top of the apples and drizzle on the rest of the cinnamon/maple mix.
Bake in the oven for 1 hour.
