Beef and Red Pepper Burgers

Serves 4

450g lean minced beef

1 small onion, grated

1 clove garlic, crushed

1 small red pepper, deseeded and finely diced

2.5ml dried mixed herbs

30ml barbecue or sweet chilli sauce

25-50g fresh breadcrumbs

Salt and black pepper

1 egg, beaten

15ml sunflower oil

Salad leaves, to garnish

Place minced beef in a large bowl, add onion, garlic, red pepper, herbs, barbecue or sweet chilli sauce and breadcrumbs. Add seasoning and egg. Mix together thoroughly, cover and refrigerate for 30 minutes.

Using damp hands shape mixture into 4-6 burgers. Brush with a little oil and cook under a preheated moderate grill for 4-6 minutes on each side, or until cooked through.

Serve in ciabatta rolls with salad leaves and a large spoonful of relish.
