Green Bean, Dill and Lemon Warm Salad

Serves 4 as a side salad

100g green beans

1 large red onion, sliced

50g butter

1 tbsp maple syrup

Juice of 1 lemon

Handful of rocket, chopped

100g toasted pine nuts

2-3 tbsps chopped dill Cook the green beans in boiling water for 2-3 minutes, then drain.

Fry the slices of onion in the butter in a frying pan and add the maple syrup once the onions have softened. Stir in the green beans, lemon juice, half of the rocket, half of the pine nuts, and the dill.

Continue cooking for 5 minutes, then remove from the heat and finish by adding the rest of the rocket and pine nuts.
