North Korea: Kamja Guk (Potato Soup)

Ingredients

• 2 cans beef or chicken broth

• 2 large potatoes, peeled and cut into bite-sized pieces

• 2 medium carrots, peeled and cut into bite-sized pieces

• ½ cup mushrooms, chopped

• 1 green onion, chopped

• Pinch black pepper

Procedure In a large saucepan, combine broth, potatoes, and carrots.

Bring to a boil over high heat, and cover.

Reduce heat to low and cook for 10 minutes, or until vegetables are tender.

Add mushrooms, green onions, and black pepper.

Stir well and cook for 2 minutes more.

Serve hot.
