Cowpea Stew (also known as Black Eyed Pea Stew or Red Red) is a traditional Ghanaian recipe for a classic stew of black-eyed peas in a tomato and red palm oil sauce that's usually served with fried plantain.
Cowpea Stew
240g black-eyed peas (cooked)
1 medium onion, sliced
2 large tomatoes, finely chopped
1/2 tbsp chilli powder
2 tbsp red palm oil (or 2 tbsp groundnut oil + 1/2 tsp paprika)
salt and black pepper to taste
Mash the black-eyed peas and set aside. Heat the oil in a pan and cook the onion and tomatoes until soft. Add all the remaining ingredients (including the peas) and simmer for 10 minutes.
