Kelewele is a popular Ghanaian snack or side dish made from plantains. They are basically fried plantain pieces, seasoned with spices.
Kelewele
Serves 6-8
4-6 plantains, bananas, ripe, but not past ripe, peeled and cut into bite-sized cubes
1/2 teaspoon cayenne pepper or red pepper
1/2 teaspoon peeled grated fresh gingerroot
1 teaspoon salt
2 tablespoons water
palm oil or vegetable oil (for frying)
1. Grind together grated ginger root, pepper, and salt, then mix with water.
2. Mix plantain cubes and spice mixture.
3. Heat oil in deep frying pan (just deep enough to allow plantains to float). Fry plantains in batches until golden brown on both sides.
4. Drain on kitchen paper, keep in warmed oven until all the plantains are fried. Serve immediately.
