YOU may not feel much like it but it's National Barbecue Week this week. But there’s more to a BBQ than perfectly cooked bangers and big juicy burgers… Try these delicious avocado recipes from Summer Avocados next time you fire up the barbie.

Smoked Mackerel and Avocado Salad

Serves 6

Zest and juice of 2 fresh limes

3 tbls olive oil

1 medium red onion chopped

4 firm ripe tomatoes chopped

half bunch roughly chopped coriander

half cup chopped parsley

2 green chillies chopped

1 clove crushed garlic

Salt and freshly ground black pepper

two fillets of smoked mackerel, grilled and cut into strips

3 firm ripe avocados peeled and diced at the last moment

Place all the ingredients except the avocado into a large bowl and gently mix together, place in the fridge for an hour.

Just before serving stir in the avocado so it keep its shape and doesn’t become too mushy.
