A VINTAGE inspired Deli Café in Bournemouth is one of a select number of small independent businesses from around the UK to be included in a new cookery book.

The book, which is free to download online, has been created to promote Small Business Saturday, the campaign that culminates in the UK’s dedicated day for small businesses on December 3rd.

Little Pickle Deli Café, which was recently named as one of the top three cafes in Dorset by the 2016 Dorset Tourism Awards, offers freshly made food in a cosy beachcomber setting.

Its recipe for Chocolate and Hazelnut Torte is featured in the book, which can be downloaded free of charge from the Small Business Saturday website at smallbusinesssaturdayuk.com.

Chocolate and Hazelnut Torte

Ingredients:

175g self-raising flour

300g caster sugar

50g cocoa powder

5g baking powder

5g bicarbonate soda

1/2 tsp salt

2 small eggs

100ml olive oil

2 tsp vanilla essence

165ml milk

Handful of chopped and toasted hazlenuts for decoration

Ganache

25g dark chocolate (39 per cent cocoa solids), broken into pieces

125ml double cream

Method:

Sieve together the flour, caster sugar, cocoa powder, baking powder, bicarbonate soda and salt 3 times.

Combine the wet ingredients and pour onto sieved ingredients. Whisk ideally using a balloon whisk.

Slowly trickle in 165 ml of boiling water. Whisk together to combine everything then pour into prepared 22cm tin.

Bake at 160C for 75 minutes to 90 minutes or until firm to touch.

Ganache

Make the ganache by gently heating the cream in a pan. Add the broken chocolate to the hot cream and stir until melted.

Leave to cool before pouring it on to the cake and adding the toasted hazelnuts
