Learn to love your kitchen with this Goan Fish Curry recipe, which ties in with next month's Pommery Dorset Seafood Festival in Weymouth.

CHEFS will be encouraging people to get back in their kitchens at next month's Pommery Dorset Seafood Festival.

And to help tempt people back to the kitchen, sponsor Fisher Paykel will be inviting people to a Social Kitchen at the festival, which takes place over the weekend of July 8 and 9 in Weymouth’s historic harbour.

The Social Kitchen aims to encourage people back into their kitchens, be it to cook, socialise or create.

From dinner parties where everyone ends up stood in the kitchen as the host adds the finishing touches to the meal, to the kids at the kitchen table completing school projects whilst dad throws together dinner, the kitchen plays many roles and appliance designer and manufacturer Fisher Paykel is urging people to work in tandem with busy lives, creating an easy, fun environment for all those that congregate there!

The Social Kitchen at this year’s Pommery Dorset Seafood Festival offers festival-goers the opportunity to see Fisher & Paykel appliances in action, as well as learning about how to create some amazing meals with local produce.

An array of incredible chefs are lined up to demonstrate and chat through top tips, secret ingredients and their own personal favourite dishes. Fisher & Paykel’s chef, Clover Hutson, will be on hand to cook with guests – with guests enjoying the results at the end!

The Social Kitchen can be found near the Pavilion, Weymouth Harbour during the Pommery Dorset Seafood Festival from July 8 to 9.

Fisher & Paykel chef, Clover Hutson whets the appetite with a delicious Goan Fish Curry recipe:

Goan Fish Curry  

  • 2 sliced shallots
  • 2 long green chillies, thinly sliced
  • 2 garlic cloves, finely chopped
  • 4cm piece fresh ginger, peeled and grated
  • 2tsp ground cumin
  • 2tsp ground turmeric
  • 2tsp garam masala
  • 2tsp ground coriander
  • 2 cardamom pods, split
  • 2 bay leaves
  • 140ml full fat coconut milk
  • 400g chopped tomatoes
  • 5tbsp vegetable stock or water
  • 600g skinless haddock fillet, or talapia or river cobbler, any firm white fish cut into chunks and you can also add king prawns and crab - your preference
  • Juice of half a lime
  • 2tbsp fresh chopped coriander
  • Rice to serve

In a large heavy based saucepan add a good glug of rapeseed oil, then fry the onion over a medium heat stirring frequently for about 10 mins until softened and beginning to colour.

Stir in the chillies, garlic, ginger, ground spices, cardamom seeds and bay leaves then cook for approx 1 min.

Pour in the coconut milk, chopped tomatoes, stock or water then bring to the boil. Reduce the heat and simmer half covered for approx 5 mins.

Add the haddock or firm fish and continue to simmer half covered stirring occasionally and taking care not to break up the fish pieces. Cook for about 6 mins the add the raw prawns and cook for another 4 mins. Cook for approx 10 mins in total with or without the prawns. Making sure the fish and prawns are cooked through.

Season to taste and stir in the lime juice. Serve with sprinkled coriander and rice. And a pile of hot chapatis!
