This is an extremely easy and quick cookie recipe to make that always goes down well with both kids & adults alike and contains less sugar than you might expect.

Perfect for children to make for Mum for Mother’s Day!

Triple Chocolate & Vanilla Cookies

125g unsalted butter, at room temperature

75g light soft brown sugar

150g self raising flour

1 tbsp milk

2 tsp vanilla extract

30g dark chocolate roughly chopped (70% cocoa solids)

50g milk chocolate roughly chopped (ideally minimum of 35% cocoa solids)

50g white chocolate roughly chopped (ideally minimum of 30% cocoa butter)

2 baking trays lined with baking parchment

Pre heat the oven to 180 C (350 F) Gas 4. Makes 12 large cookies

Cream the soft butter and sugar together in a bowl with a spoon until light and fluffy.

Add the flour and milk and mix into a dough.

Add the vanilla, chopped chocolates and stir them into the mix.

Divide the dough into 12 balls. Then place the balls on each baking tray, leaving lots of space between each cookie as they will spread a lot as they cook.

Then squash each cookie gently with your fingers to create flat topped chunky circles Bake for 12-15 minutes or until golden brown.

Allow the cookies to cool on the tray for a few minutes to firm up before moving them onto a wire rack and eat as soon as they are cool enough. I love them best when the chocolate is still warm & slightly squidgy inside!
