This week, Bournemouth’s deputy mayor Phil Stanley-Watts shares his recipe for broccoli and spinach omelette.
Phil, who is a seasoned marathon runner, says this meal is a key part of his training diet and recommends it for anyone preparing for the Bournemouth Marathon Festival in October.
“This is a quick, nutritious meal.
“For more protein eat with salmon.
“It is also good for young children as it gives them strong bones.
“It is also a great energy provider which is perfect as a deputy mayor, and previously the town mayor, with engagements seven days week, you certainly need to have plenty of stamina.”
Broccoli and Spinach Omelette
- 3 eggs
- 1 tbsp of water
- 1 tbsp milk
- Pinch of sea salt
- 4oz spinach
- 4oz broccoli
Bring vegetables to the boil, heat some olive oil in a pan and whip the eggs gently before pouring into the heated frying pan before adding the vegetables.
After it is cooked through, serve with vine tomatoes and lettuce drizzled with a little olive oil.
