Simple Mixed Fish Pie
Serves four
- 250ml white sauce (Bechamel) with a teaspoon of mustard – warm
- 500g approximately of creamy mashed potato – warm
- 125g grated cheese (optional)
- 4 cooked chopped baby leeks
- 125g frozen peas
- 4 hard boiled eggs, peeled and quartered
- 125g natural smoked haddock
- 125g hake, coley or cod fillet
- 125g salmon fillet
- 125g cooked prawns
Lightly cook all the fish before assembling.
To finish and present: using one large or four smaller dishes, layer the fish pie starting with a spoonful of white sauce, then layers of fish, vegetables, chopped egg, shellfish and more béchamel.
Top with creamy mashed potato and cheese if you would like. Bake in a moderate to hot oven,180c, gas mark 6 for 20-25 minutes.
