Simple Mixed Fish Pie

Serves four

  • 250ml white sauce (Bechamel) with a teaspoon of mustard – warm
  • 500g approximately of creamy mashed potato – warm
  • 125g grated cheese (optional)
  • 4 cooked chopped baby leeks
  • 125g frozen peas
  • 4 hard boiled eggs, peeled and quartered
  • 125g natural smoked haddock
  • 125g hake, coley or cod fillet
  • 125g salmon fillet
  • 125g cooked prawns

Lightly cook all the fish before assembling.

To finish and present: using one large or four smaller dishes, layer the fish pie starting with a spoonful of white sauce, then layers of fish, vegetables, chopped egg, shellfish and more béchamel.

Top with creamy mashed potato and cheese if you would like. Bake in a moderate to hot oven,180c, gas mark 6 for 20-25 minutes.
