Andy Briggs, head chef at The Stable, shares his recipe for a pizza with a big difference

When most people think of ordering a pizza in a restaurant, they don’t usually think of looking at the dessert menu.

At The Stable on Poole Quay, customers are starting to realise that if they look beyond the main courses, they’ll find a few surprises on the pizza menu. The “Pizza Pudding” is a completely innovative concept thought up by Head Chef Andy Briggs (pictured).

It combines the Stable’s usual sourdough base but rather than topping with tomato sauce and locally sourced cheddar, it’s chocolate, chopped hazelnuts and mascarpone cheese.

“With our pizzas, we try to offer something a little bit different,” says Andy. “The names and ingredients are inspired by the West Country, with toppings sourced from local suppliers and growers.

“Maintaining such an innovative approach to our pizzas is also reflected in the dessert options, none more so than our Pizza Pudding”.

This very simple recipe will show you how to mix things up in the kitchen to make your own “Pizza Pudding”.

Pizza Pudding

  • Pre-rolled dough base
  • Chocolate Nutella
  • Mascarpone

Firstly, turn your oven on and set to high heat.

Roll the dough base into a thin round circle, approx 8 inches in diameter and spike a few holes in the base with a fork in order to prevent it raising too much.

In a saucepan, warm up 3 tablespoons of Nutella, until the consistency is easy to spread.

Divide the mascarpone into chunks and evenly spread on top of the base.

Using a spoon, drizzle the Nutella over the pizza base and mascarpone.

Use as much or as little as you fancy!

Sprinkle with chopped hazelnuts.

Place in the pre-heated oven on a greased baking tray, and bake for 2-5 mins until the base has a slight crisp.

As an option, you can serve with chopped banana, fresh strawberries or raspberries and of course, clotted cream.

The Stable always like to suggest a tipple to go with each dish, and Andy recommends a dash of cider brandy, or perhaps half a sweet cider such as Joe’s Sweet made locally in Wareham.
